Recipe: Egg Cups

Egg Cups and Fruit


Another easy dinner! Here we go:

1 onion, diced
1-2 bell peppers, diced
1 big handful fresh spinach
1 package of Gimme Lean veggie sausage (I LOVE this stuff! It is delicious in casseroles or cut like regular sausage and browned!)
1 dozen eggs
1/4-1/2 c. milk
1-2 T. olive oil

Put 1-2 T of olive oil in a pan with your diced onion and bell peppers. Saute until your onion is translucent. Add in your big handful of spinach and continue sauteing until it is wilted. In another pan, brown the veggie sausage over medium heat.

In a separate bowl, crack the eggs and mix with the milk. Scramble together.

Once everything is done, you will ladle each of the different mixes (egg mixture, sausage, and veggies) into a muffin tin. I usually fill the muffin tin to about 2/3 full because it will puff up. Before I put it in the oven, I add my favorite seasoning (usually Mrs. Dash or Cavender's). Bake at 350 for about 30 min. Stick a toothpick in to see that it comes out clean and is cooked thoroughly. Serve with a local organic fruit. Delicious!
