Roasted Veggies and Salad

Meatless Mondays for us happen about 3 times a week. We have cut down on our meat intake. A lot. And it is making a difference! Sam has dropped 22 lbs. and I have lost 11 lbs. since April 1st. However, changing from a high fat, high sodium, high calorie, low nutrient diet to a wholesome, organic, grass fed meat diet has also made us feel great! We have more energy, don't require as much sleep, feel more rested and less stressed, and our moods have even become more positive!

We were making the changes to our diets in hopes of decreasing our chances for heart disease, cancer, and other health issues. We weren't expecting so many other positive changes in our health. I feel like I'm doing Supersize Me in reverse!


This is another one of our favorite dinners. Roasted asparagus, roasted red potatoes, and a salad. And of course, water. (We drink water, orange juice, and milk these days with an occasional cup of coffee or tea. As in, I've had one cup of tea in 2 months, and Sam has had one cup of coffee in 2 months.) We change up the veggies, but the concept remains the same. The red potatoes make this meal feel heavier which helps you feel more full on a meatless day.

  2. your blog has inspired me to make a meatless meal. we made nachos with chips, pineapple mango salsa (which was incredible!), cheese, peppers, sour cream, black beans, and guacomole. it was fantastic! thanks for the motivation to make a healthy meal!
