Turkey Fajitas
As we have been trying to eat healthier, I have found that I have to have a plan before the week begins. However, I always need to have some back-up meals for chaotic days. A great way to do this is buy buying a whole turkey or chicken (preferably free range) and cook it in the crockpot over night with a little water and seasoning on it. The next morning pull the meat off the bird and divide the meat into the portion sizes you need.
This week we cooked a whole turkey in the crockpot. Then I planned on eating turkey 3 times this week; I went ahead and divided the turkey into 3 bowls in the fridge for turkey fajitas, turkey sandwiches, and just a plain ole turkey dinner. Then I filled 3 plastic bags with turkey and froze them for the future. Now when I am in a bind and need a dinner, I already have cooked turkey that is frozen and ready to use.

We cut up a few red and green bell peppers and some onion and sauteed them with olive oil. Then we added the already cooked turkey with water and organic fajita seasoning.
Then we added organic cheese, avocados, and whatever else we wanted on our fajitas. It was delicious!
Rice and Beans
For our side, I cooked brown rice and black beans that we topped with cheese and salsa.
Another short cut on making healthy and cheap rice and beans is to a) use your rice cooker to make rice so you don't even have to think about it while you are making the rest of the meal (say no to instant white and brown rice!) and b) soak your black beans, cook them like you normally would, and then put them in small plastic bags in portions of about 1.5 cups and then put those bags in to a freezer bag. Now when you need black beans for a meal, they are already cooked and just need reheating! Easy!
This was one of our favorite meals! Yum!
