Another healthy meal from the Parnells!
Scrambled Eggs and Veggies
For another awesome alternative with veggies and eggs... I made a delicious recipe last night that I am going to call Egg Cups. I cracked a dozen eggs, added about 1/4 cup of milk, and scrambled the eggs and milk. On the stove, I browned 1 lb. of Gimme Lean! vegetarian sausage (delicious) with a T. of olive oil, and I sauteed all the veggies I had in another pan with some olive oil (red onions, tomatoes, peppers). Then I sprayed my muffin tins with oil and added the egg and milk mixture til each tin was about 3/4 the way full. Then I put 1 T. of sausage and 1 T. of veggies in each cup. I baked them for about 20 min. at 350. They were awesome!
On another note, we have now been eating locally, seasonally, and organically (as much as we can) for 2.5 months. Sam has been exercising in addition to eating better. Sam has now lost 33 lbs., and I have lost 13 lbs. (without exercising, which I intend to change soon - it's just I COULDN'T exercise the last few weeks because there were cicadas everywhere, and I didn't go outside for the 6 weeks that cicadas were here. I'm serious. My poor kids are probably deficient in Vitamin D from the lack of sunlight, but I am terrified of cicadas. Terrified.).
